Golden brown corn fritters were a special after school snack that my mom would make for me and my friends when I was growing up. These doughy snacks are pretty simple to make as all you need is basically a deep fryer. In my house, we dip our corn fritters in sour cream, but others eat them plain or dip them in maple syrup. When it comes to the dip, please take my advice, or be creative and figure out what works best for you.
Some people also may choose to make their corn fritters sweeter. You can add more sugar to the recipe (a tablespoon or two more) if you’d like to make your corn fritters on the sweeter side.
- Heat oil in a heavy pot or deep fryer to 365 degrees F (185 degrees C).
- In a medium bowl, combine flour, baking powder, salt and sugar. Beat together egg, milk, and melted shortening; stir into flour mixture. Mix in the corn kernels.
- Drop fritter batter by spoonfuls into the hot oil, and fry until golden. Drain on paper towels.
