Presto! Make Fresh Pesto

Fresh pesto is a great sauce to make in bulk for the week. It is easy to make in a food processor and adds flavor and freshness to many different types of dishes. Each of the below dishes requires enough pesto for 2 people. What you need to create the amount of pesto for each:

  • Two cups fresh basil
  • 1/3 cup pine nuts
  • Combine them and pulse in food processor
  • One cup Romano parmesan
  • Three large cloves garlic
  • While food processor is on low pour in 1/2 cup of olive oil

Now, take that wonderful green pesto, seal it, refrigerate it and start planning to enjoy some of the below quick recipes. Our motto is – if it’s bland, add pesto!

    Dinner: Pesto, Penne, Peas

  • Boil brown rice penne pasta (a healthier option!)
  • Frozen peas
  • Grilled Kielbasa sausages slivered
  • Lots and lots of pesto
  • Combine in large pan and serve hot

     Lunch: Chicken Salad Pesto Sandwiches 

  • Mix pesto with plain Greek yogurt
  • Shred baked chicken breasts
  • Toss in some diced up radishes
  • Mix together and let cool
  • Serve on fresh baguette with a sprinkle of arugula

    Appetizer: Pesto Deviled Eggs

  • Eggs hard-boiled, cooled and peeled
  • Cut eggs in half and place yolks in a bowl
  • Whip yolks with appropriate amounts of Greek yogurt and fresh pesto
  • Take icing piping bag and place mixture inside, redistribute into egg cavity
  • Chill until ready to serve
