Leftover Ham, Kale, and White Bean Soup

Another Easter has come and gone, and if you are like me, you might have a lot of leftover ham from your Easter dinner. Sure, you could make another ham sandwich, but how about a soup? I use this recipe to get rid of my Easter leftovers, and the best part is that you can substitute any of the vegetables for whatever happens to be around in your kitchen. It’s a great way to make use of what you have on hand in the house, and it tastes warm and comforting too. This soup is also incredibly easy to make. You basically throw it into a crock-pot and leave it for a few hours. Perfect for a day that you don’t have much time to be at home cooking.

  • (2) 15 oz. cans of cannelini beans
  • 6 cups chicken broth
  • 3 cups of shredded ham
  • 2 cups chopped kale
  • 1 cup sliced carrots
  • 1 Tbls minced garlic
  • 1 Tbls rosemary
  • 2 tsp thyme
  • 1 tsp pepper
  • 1 small onion, diced

Throw everything in the crockpot and cook on high for 2-4 hours or low 4-6.
