For those looking to put a healthy spin on their favourite comfort foods, search no further.
A popular recipe on healthy-eating Pinterest and Instagram accounts, protein pancakes aren’t just for gym rats looking to build muscle. This gluten-free alternative to the traditional breakfast staple is as delicious (truly!) as it is easy — the recipe I use involves just three simple ingredients.
– ½ scoop of whey vanilla protein powder (available at most health food and grocery stores)
– ½ cup of egg whites
– ½ cup oats
Once you have your ingredients, simply blend them together and cook them in a frying pan with no-stick spray. You can even top your pancakes with some vanilla icing by mixing ¼ cup of plain Greek yogurt with ¼ cup of the protein powder.
Feel free to decorate your pancakes with all sorts of additional toppings: chocolate chips, bananas, blueberries, raspberries, almonds, cinnamon, peanut butter — you name it! Get creative and style them to your personal preference.
The best part about this recipe? Not only will these satisfy your pancake cravings, but a protein-filled breakfast is bound to keep you full for hours — giving you have ample energy to tackle a busy morning at the office, back-to-back classes, or wherever your schedule takes you.
