Steak Islandia Marinade


This is my all-time favourite way to eat steak – the marinade makes the meat extra juicy, and the lemon zest gives it a nice zing. Use flank steak for the best result, and if you can barbecue your marinaded meat, even better. Serve it with a baked potato, and steamed green vegetables.


  • 1 tsp lemon zest
  • 1/2 lemon, juiced
  • 1/4 cup olive oil
  • 1/4 cup soy sauce
  • 1 tsp grated fresh ginger
  • 1 clove of garlic, minced
  • 1 tsp brown sugar


Whisk all of the ingredients together and pour over steak. Marinate for at least six hours.
