If you are looking for a quick and easy meal to make tonight, look no further. I believe that there are few recipes that are as quick and easy as this one. This tomato and basil one pot pasta takes about 20 minutes to make, and it only uses one pot the entire time. If you are like me and are still washing dishes by hand, that makes this a huge time saver.
The recipe is simple. All you have to do is combine all the ingredients into the same pot filled with just the right amount of boiling water. The water should cook into the ingredients and evaporate so that there is just enough liquid to make a sauce. You can try adding in some wine with the water to add flavour, or using chicken stock instead of water.
This may not be the fanciest dish that you’ve ever created, but it is a great one to have in your back pocket for a day when you have little time to cook, or you are just feeling lazy and homey. Feel free to experiment by adding more vegetables in, but keep the tomatoes since they are vital for the sauce.
- 12 ounces linguine
- 12 ounces cherry or grape tomatoes, halved or quartered if large
- 1 onion, thinly sliced (about 2 cups)
- 4 cloves garlic, thinly sliced
- 1/2 teaspoon red-pepper flakes
- 2 sprigs basil, plus torn leaves for garnish
- 2 tablespoons extra-virgin olive oil, plus more for serving
- Coarse salt and freshly ground pepper
- 4 1/2 cups water
- Freshly grated Parmesan cheese, for serving
Combine pasta, tomatoes, onion, garlic, red-pepper flakes, basil, oil, 2 teaspoons salt, 1/4 teaspoon pepper, and water in a large straight-sided skillet. Bring to a boil over high heat. Boil mixture, stirring and turning pasta frequently with tongs, until pasta is al dente and water has nearly evaporated, about 9 minutes.
Season to taste with salt and pepper, divide among 4 bowls, and garnish with basil. Serve with oil and Parmesan.
