The arrival of summer means the return of one of the tastiest beverages around: smoothies! I love starting my day off right with this healthy drink, or having one after I finish a workout. All you’ll need is a few simple ingredients and a blender. This refreshing blend features some staple summer fruits, such as blueberries and bananas, which never seem to disappoint. The key that I have found to a delicious smooth involves one secret ingredient: cucumbers. This really takes my smoothie to a whole new level.
Feel free to substitute the cup of frozen blueberries with any other berry you’re craving instead, such as strawberries, raspberries, or blackberries. Perfect to enjoy in the summer heat while relaxing poolside, or to take with you as an on-the-go snack.
The recipe below makes four servings.
- 1 cup frozen blueberries
- 1/2 cup sliced banana
- 1/2 cup sliced peeled cucumber
- 1/2 cup water
- 1/2 cup vanilla yogurt
- 1/2 cup crushed ice
Blend blueberries, banana, cucumber, water, and yogurt in blender. Add crushed ice and blend until smooth. Pour into a glass or mason jar and enjoy your delicious smoothie!
