Looking for an easy all-in-one meal? One of my personal favorites is stuffed red bell peppers. There are plenty of different ways to stuff them. I love the herbaceous Mediterranean flavors when the peppers are stuffed with thyme, feta, cherry tomatoes and basil. Be sure to use fresh herbs – the dried ones just aren’t the same. I make them all the time. If you are looking for something meatier there are plenty of delicious stuffed peppers for meat eaters using basically any meat you might prefer. And if you are a vegan, there is also a delicious quinoa, black bean and mushroom stuffed pepper recipe that is sure to satisfy.
