It’s summer, and it’s finally getting hot, and that means that any meal that doesn’t require an oven or for you to be in the kitchen for hours is your best friend – especially when you’re at the cottage. The humble tuna salad sandwich might sound like a boring solution to this problem – but think again. This recipe has not one, but two twists: basil and garlic. Both are surefire, crowd-pleasing ways to spice up any classic tuna sandwich recipe. Of course, feel free to choose whatever kind of bread, bun or bagel you want to use and toast it for a little extra crunch.
- 2 cans tuna
- 2 tbsps mayonnaise
- 1 tbsp mustard
- 2 tbsp pesto
- 2 garlic cloves
- 8 bread slices
- 8 lettuce leaves
- 1 large tomato
- Drain the tuna and mince the garlic, and mix both with the mayonnaise, mustard, and pesto.
- Put a piece of lettuce and a slice of tomato on four of the bread slices. Scoop the tuna mixture on top and put the four other slices on top of that.
- Serve with a dill pickle and coleslaw.
