Garlic and Parmesan Salmon Foil Pack

With long workdays, gym commitments and social events, weeknights can be hectic. If you’re having a particularly busy day or week, try making this quick and easy salmon foil packet for one instead of ordering take-out. This light meal can be ready in half an hour, has little prep time, and there’s barely anything to clean up – sounds amazing, right?

If you’re cooking for two, or want to make your lunch for the next day, double the recipe and make two foil packs.

Ingredients

  • 6 oz piece of salmon
  • 7 asparagus spears
  • 1 tbsp butter
  • 1 tbsp grated Parmesan cheese
  • 1 clove garlic, pressed
  • 2 tsp of lemon juice
  • Salt and pepper to taste

Directions

  • Preheat oven to 375
  • Cut a sheet of aluminum foil large enough for the asparagus and salmon
  • Arrange asparagus spears on foil and top with the salmon
  • Mixed the remaining ingredients in a bowl until it forms a paste
  • Smear the mixture on top of the salmon
  • Cut another piece of foil large enough to cover everything and fold the sides to make a pack
  • Place on a baking sheet and bake in the oven for 30 minutes
